"Many people who visit Egypt don't necessarily keep fond culinary memories. I wanted to reconcile them with our cuisine," says Omar Dhiab, a Michelin-starred chef, less than a year after opening his second establishment, 'Elbi', a Parisian bistro with Egyptian and Tunisian influences—a reflection of his roots.Although he was born in France in 1988, his father is Egyptian and his mother is Tunisian. "My father worked as a cook in Parisian bistros and Italian trattorias. At home, he often cooked Egyptian dishes for us: mouloukhia with poultry and rice with vermicelli, mehchi — vegetables stuffed with rice, dill, and ground meat—or kofta," recalls the 38-year-old chef of his father, who moved to Paris in the 1980s.
