- For the kefta meat base:
- 1.2 kg leg of lamb
- 6 g kefta spice mix
- 3 g ground cinnamon
- ½ bunch of parsley
- 150 g onions (about 2 medium onions)
- 6 g salt
- For assembling the burger:
- 6 sesame seed buns
- 360 g halloumi
- 3 tomatoes
- 3 onions
- 18 leaves of little gem lettuce
- For the sauce:
- 300 g mayonnaise
- 120 g ketchup
- 6 g Tabasco
- 3 g salt
- Chop the lamb meat with a knife.
- Mix it with the spices, parsley, sliced onions, and salt, then run the mixture through a meat grinder.
- Prepare the sauce by mixing all the ingredients in a bowl.
- Cut the buns in half and toast the inside faces in a pan, on a griddle, or on a barbecue over high heat for a few seconds until golden.
- Form 200 g patties with the meat.
- Grill them in a pan, on a griddle, or on a barbecue over medium-high heat for 7 minutes on each side.
- Slice the halloumi and grill in a pan, on a griddle, or on a barbecue over high heat for a few seconds.
- Slice the tomatoes and onions into rounds.
- Separate and wash the little gem lettuce leaves.
- Spread 40 g of sauce on the bottom half of each bun, and 30 g on the top half.
- Place 3 lettuce leaves per burger, one kefta patty, a few slices of halloumi, a few tomato and onion rounds, then close the burger with the top bun.
- Serve with fries or a salad.
