Tara Habis's lemon tart with a touch of zaatar

Ingredients
  • For the shortcrust pastry:
  • 75 grams butter
  • 50 grams granulated sugar
  • 32 grams eggs
  • 160 grams flour
  • 1 gram of salt
  • A pinch of zaatar.
  • For the almond cream:
  • 37 grams butter
  • 37 grams almond flour
  • 37 grams sugar
  • 37 grams eggs
  • 3 grams rum (optional).
  • For the lemon cream:
  • 150 grams lemon juice
  • 80 grams egg yolks
  • 90 grams sugar
  • 120 grams butter.
  • For the Italian meringue:
  • 50 grams egg whites
  • 32 grams water
  • 100 grams sugar.

For the shortcrust pastry:

  1. Rub the butter with the flour, powdered sugar, zaatar, and salt. Once you have a texture resembling sand, add the eggs gradually.
  2. Roll the dough out between two sheets of parchment paper to 4 mm thick and chill.
  3. Take out the dough and line the tart ring. Place in the fridge for 15 minutes.

For the almond cream:

  1. Soften the butter, add the almond flour, sugar, and mix.
  2. Add the eggs with a whisk, without over-mixing.
  3. Fill the tart shell and bake at 170°C for 20 to 25 minutes.

For the lemon cream:

  1. Whisk the egg yolks with the sugar and lemon juice.
  2. Bring to a boil and cook for 30 seconds after boiling, whisking continuously.
  3. Cool the cream to 45°C, then add the butter and blend.
  4. Pour into the baked tart shell and allow to cool so the surface sets.


For the Italian meringue:

  1. Make a syrup with the water and sugar, cooking it to 118°C.
  2. Whip the egg whites to stiff peaks and slowly pour in the syrup.
  3. Whisk until the meringue cools down.
  4. With a Saint-Honoré piping tip, pipe the meringue and let your creativity shine!

Tara Habis, the architect turned chef
bio

Trained as an architect, pastry chef, chef and founder of the restaurant ''tara'' in Paris, Tara Habis sees a common thread in each of her experiences: a sense of organization.

Arriving in Paris in 2014, she quickly left architecture to focus on pastry. Trained at the school of renowned chef Alain Ducasse, she completed an internship with Cédric Grolet but had to stop due to a lack of a work permit. It was then that she met Kamal Mouzawak, whom she would come to consider her mentor. She joined the team at his restaurant, Tawlet, and gradually climbed the ranks, moving from pastry chef to kitchen manager. For two years, she reinterpreted Lebanese recipes to suit Parisian tastes, managed the teams, and honed her understanding of an intense profession where time is short and there is no room for error.

In 2024, she took another step forward by opening her own restaurant ''tara'', a place in her image, designed down to the smallest detail.
