The newly opened Asbaya restaurant in Sodeco, which welcomed its first guests on June 19, offers more than just a place to dine. For co-founder and operations director Jana Halimeh, it is a living tribute to her hometown, Hasbaya, southern Lebanon — and to an ingredient that has become a family emblem: olive oil."Every year, we return to Hasbaya for the olive harvest, participating in every step of making our oil," says Halimeh. That tradition sparked the idea for a restaurant built around the cherished product, which the Halimeh family initially simply shared with others. "The feedback was so touching that we thought we should make something bigger out of it," she explains.
